An easy, seasonal classic! Baked apples are a healthy, low calorie shower dessert. Baked apples and tasty Kettle Korn are a Halloween shower no-brainer! Recipe is amazingly simple and makes your house smell yummy. Burn cinnamon candles to bump up your party theme to another level.
Good baking apples are: Rome Beauty, Golden Delicious, or Jonagold (see apple cooking varieties)
4 large large baking apples
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup chopped pecans or walnuts
1/4 cup currants or chopped raisins or dried cranberries
1 Tbsp butter
3/4 cup boiling water
Preheat oven to 375F.
Wash apples. Remove apples cores. It's easier if you have an apple corer, but if not, use a paring knife to cut out the stem area and the core. Use a spoon to dig out the seeds. The holes should be about 3/4-inch to an inch wide.
Blend together the sugar, cinnamon, currants/raisins/dried cranberries, walnuts or pecans. Place apples in a 8-inch-by-8-inch square baking pan. Stuff each apple with the mixture. Top each apple with a dab of butter.
Add boiling water to the baking pan. Bake 30-40 minutes, until tender, but not mushy. Remove from oven and baste the apples several times with the pan juices.
Serve with a dollop of whipped cream and warm vanilla ice cream on the side.
Makes 4 servings. Be sure to make enough apples for each guest!
