This recipe serves 4, so be sure to double or triple up on dip if you're preparing Tofu Niblets for more guests!
Marinade
1/4 c. light coconut milk
2 Tbsp curry powder
1 Tbsp minced garlic
1 Tbsp reduced-sodium soy sauce
1 container (14 oz) extra firm Tofu
Dipping Sauce
1/3 c. rice wine vinegar
1/4 c. unsalted peanut butter
2 Tbsp reduced-sodium soy sauce
1 Tbsp freshly squeezed lime juice (if lime are out of season, bottled is okay)
1 Tbsp honey
2 tsp. Minced garlic
1/2 tsp red curry paste
Marinade
Pat the Tofu dry and cut into cubes
Soak Tofu in Marinade and chill for 2 hours (minimum!).
Preheat oven broiler for 10-15 minutes.
Place Tofu squares on foil lined cookie sheet. Coat Tofu squares lightly with cookie spray and broil for 4 minutes. Turn squares over and coat lightly with cooking spray. Broil for 4 minutes or until a light golden brown.
Serve as-is on a festive platter with toothpicks for easy eating. If you like, make this ultra yummy dipping sauce to go with!
Dipping Sauce
Mix ingredients well and serve chilled.
